On page 6 of the Buddy E basic c6 lesson book there is tablature for something called EZ blues. The tablature shows four strings being plucked at a time but everything about Buddy E and most C6 players says they only use a thumb and two finger picks. What’s going on there? Thanks.

That's called a "rake". The fingers pick the top 2 string, and you slide up the bottom 2 with your thumb. Very common technique. You can actually do it with more that 4 strings too.

OR.. you can play with 4 fingers and get used to a pick on your ring finger the way Reece played. I’ve used both techniques playing EZ blues and either works

It's more of a squeeze or pinch using your 3 fingers to get kind of a chord block melody as you can hear in my video below. Think of as it as if you're picking 1 string by using all of your pick fingers to strike four strings at once.
